Oolong Tea
Oolong Tea is tea where there has been partial fermentation of the
leaves. In making Oolong Tea the fermentation process is allowed only up
to 30% and 70% is left green. Stopping the fermentation at the right
time is the most important factor relating to Oolong Teas success.
